Fanny SabreFranceFanny Sabre didn't plan to be a winemaker. She was at university studying law when her father died and she took over the running of the estate. It was then that she discovered that she enjoyed it. Initially, it was with the help of natural wine pioneer Philippe Pacalet, who stepped in to help following Fanny’s father’s death. When Pacalet moved on to his own projects once more, Fanny, then in her mid-20s, was left to manage the estate on her own. This is a beautiful wine with great complexity, depth and beautiful structure. At a recent tasting everyone was blown away by it and kept returning to it to work out what was making it so appealing. The minerality and the complexity creeps up on you slowly. In the glass it has a straw yellow co lor, the nose is quite intense, we find exotic fruit and slight hints of aromatic herbs, there are timid citrus notes. Brilliant straw yellow with golden reflections. The nose is clean and very broad with notes of ripe fruit and sweet spices supported by a light smoky background given by the passage in wood.
